1 tablespoon olive oil

Salt and pepper, to taste

½ cup sweet chili sauce

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon garlic powder

For the Coconut Lime Drizzle:

½ cup canned coconut milk (full-fat for best flavor)

1 tablespoon lime juice (freshly squeezed)

1 teaspoon honey or maple syrup

Pinch of salt

1 teaspoon lime zest

For the Bowls:

2 cups cooked jasmine or basmati rice

1½ cups steamed broccoli florets

1 cup shredded carrots

1 red bell pepper, thinly sliced

2 tablespoons chopped fresh cilantro (optional)

Lime wedges, for serving

In a medium bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, and garlic powder.

Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 6–8 minutes.

Pour the sweet chili sauce mixture over the chicken. Reduce heat to low and let it simmer for 2–3 minutes until thick and sticky. Remove from heat.

In a small bowl, whisk together the coconut milk, lime juice, honey, salt, and lime zest. Set aside.

Assemble your bowls: start with a scoop of rice, then top with sweet chili chicken, steamed broccoli, shredded carrots, and red bell pepper slices.

Drizzle with the coconut lime sauce and sprinkle with fresh cilantro. Serve with lime wedges.
