2 cups strong black coffee (approx 500mL)
1/2 cup kahlua (or a little more to taste)
1/2 cup caster sugar (can add/subtract to taste)
250g mascarpone
450ml thickened cream, lightly whipped (May need to adjust cream amount depending on size of container)
1 large packet of sponge finger biscuits (savoiardi)
Cocoa powder, for dusting
Arahan
1. Combine coffee and kahlua (coffee liqueur)
2. Beat cream with sugar, until soft ripples - then add mascarpone and mix a bit more. Add ~2-3 tbsp of coffee + liqueur to the cream
3. Dip sponge finger biscuits into coffee mixture (dip only about 2 secs each side - do not soak through), then lay flat in container. Then cover with cream, and make 2 layers.
4. Refrigerate for at least 2 hours (overnight is fine). Dust generously with cocoa powder just before serving.
