Grilled Cheese with Spicy Tomato Jam

1 cup (200 g) light brown sugar, (packed)

2 tablespoons apple cider vinegar

1 teaspoon kosher salt

½ cup (1 stick / 113 g) butter, (softened)

1 tablespoon finely chopped parsley

½ teaspoon garlic, (minced)

½ teaspoon kosher salt

1 cup spicy tomato jam, (divided)

8 slices sourdough bread

1 cup (113 g) Gruyere cheese, (grated, divided)

1 cup (113 g) white cheddar cheese, (grated, divided)

Spicy Tomato Jam

Add all ingredients to a large saucepan. Stir to combine; bring to a boil.

To a large saucepan over medium heat, add diced tomatoes, brown sugar, apple cider vinegar, salt, red pepper flakes, ginger, and cinnamon. Stir to combine and bring the mixture to a boil, stirring frequently. This will take about 10 minutes.

Reduce heat to low. Simmer.

Remove from heat; let it come to room temperature.

Remove from heat and let cool to room temperature before serving.

Garlic Butter

Make garlic butter. Mix ingredients to combine.

In a medium bowl, add butter, parsley, garlic, and salt. Mix to combine.

Grilled Cheese

Brush a side of bread with garlic butter. Flip over and add tomato jam.

Generously spread the garlic butter on one side of a slice of bread. Flip over the slice of bread and spread ¼ cup of spicy tomato jam.

Place bread in pan, butter side down. Top with cheese.

In a pan over medium-low heat, add bread (butter side down). Top with ¼ cup of the Gruyere cheese, and ¼ cup of the white cheddar cheese.

Spread garlic butter over the second slice of bread. Place on top of cheese.

Add garlic butter to another slice of bread and place that on top of the cheese, butter side up.

Cook over medium-low heat for 5-7 minutes; then, flip over the sandwich and cook another 5-7 minutes, or until golden brown. (If it seems like the bread is taking a long time to brown, be patient, as the cheese inside needs time to melt.)

Repeat with remaining ingredients.

Remove the sandwich from the pan and repeat with the remaining ingredients. Serve warm.
