1 1/2 cups sugar (297 grams)

1 cup shortening (190 grams)

6 eggs

2 teaspoon anise extract

1 teaspoon almond extract

6 cups cake flour (684 grams)

6 teaspoon baking powder

1 teaspoon diamond crystal kosher salt

2 jars dry roasted almonds

Arahan

Preheat oven to 325 degrees

In a large bowl, add sugar and Crisco. With kitchen aid or hand mixer, mix until smooth.

Add eggs and again mix until smooth.

Add anise and almond extracts and mix a little, one last time.

In another bowl, sift flour, baking powder and salt. Add in batches to liquid mix. You will soon have to mix by hand, as dough will get real stiff.

Divide dough in half and roll out like logs and put on cook sheets.

Take almonds and push in to logs from the top. You should end up with 2 parallel rows, the length of each log. Press down on logs to flatten, slightly.

Bake at 325 degrees for 30 min. or until logs are light brown on bottom

Let cool completely and slice with serrated knife. Spread flat on cookie sheets and bake at 325 degrees for 20 min.
