1 large ciabatta loaf
(Bread from the day before actually works even better.)
🧄 Garlic mixture
1 whole head of garlic
3 Tbsp olive oil
2 Tbsp softened butter
Salt, to taste
Black pepper, to taste
Red chili flakes, to taste
A pinch of finely chopped parsley
Grated Kashar cheese (the person who made it used mozzarella instead)

Peel the garlic cloves and sauté them in a pan with the 3 tablespoons of olive oil. Stay with them and stir constantly because they cook very quickly.
Let the garlic and oil mixture cool down.
Mash the cooked garlic and mix it with the remaining ingredients:
softened butter
salt
black pepper
chili flakes
parsley
Cut the ciabatta lengthwise in half and place both halves on a baking sheet.
Spread the garlic mixture evenly over the bread.
Cover generously with the grated cheese. If you like it spicy, sprinkle some additional red chili flakes over the top.
Bake in a preheated 450°F oven (230°C) for approximately 15 minutes.

Nota
One thing I’d note: this recipe says Kashar cheese, which is a Turkish/Balkan cheese that melts beautifully. The author says they used mozzarella instead, so mozzarella is absolutely fine if that’s what you have
