Soft and Moist Carrot Loaf Cake Made in Just One Bowl

210g all purpose flour

2 eggs

200g grated carrot (fresh)

100g sugar

1/2 cup canola oil / flavorless oil

100g brown sugar

1 tsp cinnamon powder

2 tsp baking powder

1 tsp baking soda

1/4 tsp nutmeg

1/2 tsp salt

Arahan

In a large bowl, add eggs and sugar. Whisk until well combined.

Pour in the oil, carrot, and walnut mix well to combine.

Add all purpose flour, baking powder, baking soda, salt, cinnamon powder & nutmeg powder.

Mix gently until just combined. Do not overmix.

Pour the batter into loaf tin.

Bake in a preheated oven at 160°C for 45-60 minutes, or until a toothpick comes out clean.

Let the cake cool completely before frosting.

Cream Cheese

Frosting

Beat cream cheese until smooth.

Add icing sugar and mix well.

Add a little milk or cream to make it soft and spreadable. Optional

Spread on top of the cooled cake (or slice cake into layers and fill inside).
