100 grams sourdough starter

350 grams warms water

500 grams bread flour

10 grams salt + 25 grams warm water

Arahan

Making the Bread:

1. Feed the starter the day before you start. Once it is fed, leave it out of the fridge for around 5 hours before you actually use it for the bread.

2. Mix the warm water and starter. Next add the flour and mix it in. Cover for 20 minutes then add the salt and warm water mix.

3. Rest for 1 hour then stretch/fold 3 times at 30 minute intervals. (3 stretches total).

4. After the final stretch, put into heavily floured bread basket. Either let rest for 3 hours or put in fridge overnight.

Baking the Bread:

5. Put the dutch oven (empty) into the oven and heat the over to 500 f.

6. Once the dutch oven is heated, take it out and plop the bread from the basket into the dutch oven. Make 2-3 cuts with scissors or a razor.

7. Bake for 20 minutes covered, then another 20-25 minutes uncovered (until golden brown).

Nota

-Can also do 100 grams whole wheat flour + 400 grams bread flour instead
