This healthier Mongolian beef stir fry

INGREDIENTS

1 lb thinly sliced beef (flank steak or stir fry strips)

3 tbsp cornstarch

2 tbsp soy sauce

1 medium red bell pepper

3 cups sugar snap peas (8 oz)

3 tbsp oil

Sauce

2 tsp sesame oil

2 large garlic cloves minced

1 tosp grated ginger root

1/2 cup soy sauce

1 cup water

1/4 cup brown sugar

1 tbsp cornstarch

Garnish - sesame seeds and chopped cilantro

INSTRUCTIONS

1. In a bowl add thinly sliced beef and cornstarch and soy sauce.

2. Thinly slice bell pepper and cut snap peas in half.

3. In a bowl add sesame oil, garlic, ginger, soy sauce, water, brown sugar and cornstarch. Mix well.

4. In a large hot skillet, add 2 tbsp oil and stir fry meat just for a couple minutes until almost

cooked.

5. Remove meat from pan. Add remaining 1 tosp oil and stir fry peppers and snow peas just for 2 minutes until barely cooked.

6. Add sauce and cook on medium heat until slightly thickened, then add beef and stir until beef is cooked and coated with sauce. If sauce is too thick add more water.

7. Serve over rice and sprinkle with sesame seeds and cilantro. Enjoy!!
