Black Bean Birria

2 tbsp oil
½ onion, minced
1 celery stick, minced
1 red chili, minced
4 garlic cloves, minced
1 tsp cumin seeds
2 dried ancho chilis (optional), cut into pieces
2 tbsp tomato paste
⅛ tsp ground cinnamon
2 cans black beans (with liquid)
1 cup stock or water with bouillon
Toppings (choose your own path!)
Warm tortillas, sliced avocado, crumbled cheese (e.g., feta), lime wedges, raw diced onion, fresh koriander

Cook Vegetables:
Heat oil in a pot. Sauté onion and celery for 5 minutes.
Add Spices:
Add garlic, chili, and cumin seeds. Cook 2 minutes.
Build Flavor:
Stir in ancho chili (if using) and tomato paste. Cook until paste darkens.
Simmer:
Add black beans, their liquid, and stock. Cover and simmer for 20 minutes, stirring occasionally. Adjust thickness with more stock if needed.
Serve:
Spoon stew into bowls. Serve with tortillas and toppings: avocado, cheese, lime, onion, and cilantro.
