Gyudon (牛丼)

½ lb thinly sliced beef, cut into 3 in pieces (chuck or ribeye is best)
½ onion, thinly sliced
1 green onion, cut diagonally into thin slices
Sauce:
½ cup dashi
3 tbsp soy sauce
2 tbsp sake
2 tbsp mirin
1 tbsp sugar
Rice and pickled red ginger to serve

If your beef isn’t pre-sliced, place it in the freezer for 10-20 minutes. Take it out and slice it as thin as possible, against the grain. Then chop it into smaller pieces.
In a large, wide pot / wok, add the dashi, soy sauce, sake, mirin, and sugar. Stir to dissolve the sugar.
Add the onion slices and spread them in the liquid in the pot, separating the layers.
Distribute the meat on top of the onions, spreading it out to cover as much onions as possible.
Cover the pot with a lid and turn the heat to medium. Once it comes to a simmer, turn the heat to low and cook covered for 3-4 minutes.
While simmering, open the lid and skim off the scum from the broth once or twice with a fine-mesh skimmer.
Sprinkle the green onions on top and cook for another minute. Turn off the heat.
Add rice to the serving bowls and drizzle some of the liquid in the pot over the rice. Put the beef and onion mixture on top of the rice, and add more sauce as needed.
Serve warm with some pickled red ginger. Enjoy!
