Green Beans Almondine

  • 1lb French green beans (haricot verts), trimmed

  • 2T Butter

  • 1/4C Sliced almonds, raw

  • 2 Shallots, diced

  • 2 Garlic cloves, minced

  • 1 Zest of lemon

  • 2t Lemon juice

Arahan

  • Heat a large pot of water to boil, season the water heavy w/ salt, and blanch the green beans for 4-5 minutes. They should be slightly under done.

  • In a large skillet/pan, heat butter over medium-low heat until lightly bubbled, add sliced almonds & cook for 2-3 minutes, until golden brown.

  • Reduce heat to low & add shallots & garlic, sauté for 1-2 minutes.

  • Add green beans to the skillet/pan, sauté briefly, make sure it’s evenly combined, cook till tender. Remove from heat.

  • Add zest & lemon juice, toss to combine, salt & pepper to taste.

Nota

  • Haricot verts are those tiny, skinny green beans that you can sometimes see in market. I have best luck finding them at farmer’s market in summer. If you can’t find any, young regular green beans will work too.

  • If use dry roasted almond, add it after green beans are almost cooked so it won’t burn/overcooked. Slivered almonds would work as well

  • Orange can be used in place of lemon.
