Easy Avocado Blender Brownies! 17g of Fibre and 25g of Prote

when you buy too many avocados and they are all ripe, you can either make guacamole or you can make these simple, delicious and fudgy blender brownies. we had so many we actually made both! haha
honestly so easy you just pop a few ingredients into a blender and swirl in some melted dark chocolate. only essential is that you wait for this to cool completely before eating and that you eat it straight from the fridge for that intense chocolate fudgy goodness! recipe is below x
also with the dates i didn’t blend them completely so that you would get little burst of this as you enjoy the brownies x
recipe
1/2 cup ripe avocado
1/2 a cup ground almonds (without the skin) *
2 eggs
1 tsp baking powder
2 mejool dates, pip removed
1/4 cup maple syrup
1 heaped tbs coco powder
blend all the above. don’t worry about the dates blending completely, we want that in bits.
Arahan
melt 100g of dark chocolate (i used 70%)
empty the blender mix into your container lined with parchment paper, spread it out
then gently empty the melted chocolate on top and swirl this into the mixture. so it’s mixed it but sits slightly on the top
bake in a preheated oven. mine was not fan assisted and took 30 mins. fan assisted will be less (15-20). you want it so its not wet. a little wobbly on-top but firm.
also tried it with the skin and doesn’t work! tastes too grainy with this recipe x
