Fridge Cake/rocky Road

200g dark chocolate
50g butter
4 tablespoons golden syrup or runny honey depending what you have
150g digestive biscuits, broken roughly, but can use whatever you have. gluten free, or regular, digestives, shortbread, Biscoff biscuits, rich tea, Maltesers whatever you like!)
150g chopped medjool dates
145g nuts, dried fruit for this one I used a few marshmallows and some crunchy bites …….you can use whatever you have, use it as a way to use up things, a mix of chopped hazelnuts, chopped almonds, sultanas, dried cherries, marshmallows, honeycomb, meringue, popcorn, just make sure you use the same 145g quantity!)
Topping -
150g milk chocolate
50g plain chocolate
40g white chocolate
Arahan
Melt butter, chocolate and syrup in a pan until smooth
Add in broken biscuits, stir well, add everything else, stir well
Tip into a 20cm by 20cm tin lined with baking parchment, pressing into the corners, squish down well with the back of a spoon to try to level it as much as you can……refrigerate till set
When set melt milk chocolate, plain chocolate and also white chocolate all separately in the microwave or in bowls set over boiling water
When melted, pour milk chocolate over the fridge cake and spread the chocolate, tap the pan to level as much as you can
Next drizzle white and plain chocolate over the top of the milk chocolate
Run a skewer through the chocolate to marble it
Tap the pan again to level, refrigerate to set
Slice and serve, I keep in fridge as we like it served cold
