Chai latte oats

180ml semi-skimmed milk
1 tbsp light soft brown sugar
4 cardamom pods, split open
1 star anise
½ tsp ground ginger
½ tsp ground nutmeg
½ tsp ground cinnamon
1 oats sachet

1. Place the milk, sugar, cardamom, star anise and ¼ tsp each ginger, nutmeg and cinnamon in a small pan and bring to the boil, stirring occasionally, until the sugar has dissolved. Strain into a jug, discard the whole spices, then return to the pan and use the infused milk to cook the oats according to pack instructions. Spoon into a bowl.
2. Mix the remaining ¼ tsp each ginger, nutmeg and cinnamon together until evenly combined then use to dust the top of the porridge, using a latte template to create a unique pattern, if you like.
