30 Minute Broccoli, Cheddar, Rice, & Chicken Skillet

1 tbsp olive oil

4 cups broccoli florets, chopped small

1/2 white onion, diced

1 pound Ground Chicken

2 Tablespoons Ranch Seasoning

1 cup rice, rinsed

2 cups chicken broth

1 cup shredded cheddar cheese

Heat a large skillet over medium heat. Add oil, broccoli, & onions. Cook for 4-5 minutes. Remove from the skillet and set aside.

Add the ground chicken to the pan. Season with the ranch seasoning. Break apart and cook for 4-5 minutes.

Add the rice and the chicken broth to the pan. Stir to make sure none of the chicken is sticking to the pan. Cover and bring to a boil before reducing heat to a simmer. Cook for 12 minutes until the rice is cooked. Stir about halfway through to prevent sticking.

Once the rice is cooked, turn off the heat. Add about half the cheese. Stir to melt the cheese. Add the broccoli and onions back in. Top with the rest of the cheese. Cover for a few minutes to melt the cheese.

Then it’s ready to serve and enjoy!
