For the Chicken Shawarma Balls
1 ½ pounds boneless chicken breast and thigh
1 large onion
1 bunch parsley
1 ½ tablespoons Shawarma spice
2 teaspoons salt
About 2 cups of oil for frying
For the Israeli Salad
4 Persian cucumbers (peel on)
2 Roma tomatoes
1 bunch parsley
Fresh lemon juice (from 1 lemon)
Drizzle of olive oil
Salt and pepper to taste
For the Creamy Tehina
1 cup pure sesame paste
Fresh lemon juice (from 1 lemon)
1–2 teaspoons salt, to taste
About ¾ cup ice-cold water

Store-bought Amba sauce (found in international markets or online)

Prepare the Chicken Shawarma Mixture
In a food processor, combine the chicken, onion, parsley, Shawarma spice, and salt. Pulse until it forms a well-mixed, slightly sticky texture.
Transfer the mixture to a bowl, cover it, and refrigerate for at least 30 minutes to firm up.
Make the Israeli Salad
Chop the cucumbers, tomatoes, and parsley into small pieces.
Dress with fresh lemon juice, a drizzle of olive oil, and season with salt and pepper to taste.
Toss everything together and refrigerate until ready to serve.
Prepare the Creamy Tehina
In a bowl, combine the sesame paste, lemon juice, salt, and ice-cold water.
Whisk together until smooth, creamy, and white as can be. Adjust salt to taste, if needed.
Shape and Fry the Shawarma Balls
Heat 2 cups of oil in a small pot over medium heat.
Use a mini scooper, dunk it into a small bowl of oil (to prevent sticking), and scoop out the chicken mixture into perfectly round balls.
Carefully drop the balls into the hot oil and fry for 6–7 minutes, turning occasionally, until golden brown.
Transfer to a wire rack.
Assemble the Pita Pocket
Start by adding a few Shawarma balls to a warm pita pocket.
Top with Israeli salad, a generous drizzle of creamy Tehina, and finish with a drizzle of store-bought Amba sauce.
