Green Chicken Salad

1 cup arugula

1 cucumber

1 cup rotisserie chicken (or protein of choice, tuna would be great)

1 bunch spring onions (just the green part)

olive oil

handful of pumpkin seeds

2 slices of cheddar cheese

salt + pepper to taste

for the sauce:

large spoonful sour cream

handful of cilantro

1 garlic clove

juice or 1/2 lemon

olive oil

salt + pepper to taste

blend up the sauce & pour over salad ingredients. mix really well - it’s crucial that the components of the salad are finely chopped so that they’re all the same size. helps with distribution of sauce throughout the ingredients. add into your wrap (or don’t) and enjoy!
