Spicy Beef and Boccoli Stir-fry If you marinate the beef in

3/4 lb Sirloin or flank steak, trimmed
1 tbsp Low-sodium soy sauce
1 Garlic clove, minced
1/2 tsp Ground ginger
1/2 tsp Brown sugar, packed
1 1/2 tsp Lemon juice
1/2 cup Prepared beef broth
2 tsp Cornstarch
1 tbsp Hoisin sauce
1 tsp Granulated sugar
2 tsp Low-sodium soy sauce
2 tsp Cooking oil
2 tsp Cooking oil
1 1/2 cups Broccoli florets, cut in 1 inch (2.5 cm) pieces
Finely chopped small red chili pepper
(see Tip, below)

Combine next 5 ingredients in a small cup. Set aside.
Cut steak across the grain into 1/8 inch (3 mm) strips (see Tip, page 62). Place in a resealable freezer bag.
Stir next 5 ingredients in a cup. Pour into bag. Squeeze out air and seal. Squeeze and press bag to distribute flavour ingredients.
Stir-fry beef strips in first amount of cooking oil in a frying pan or wok on medium-high for 2 to 3 minutes until cooked. Transfer to a small bowl.
Heat second amount of cooking oil in frying pan. Stir-fry broccoli and chili peppers for 3 to 4 minutes until broccoli is tender-crisp. Add beef strips. Stir cornstarch mixture and pour over beef mixture. Stir continually until boiling and thickened. Makes 4 servings.

Tip: Hot peppers contain capsaicin in the seeds and ribs. Removing the seeds and ribs will reduce the heat. Wear rubber gloves when handling hot peppers and do not touch your eyes. Wash your hands well afterwards.
