it is stunning, and oyster mushrooms are by far the best go to for making a kebab. the mushrooms get marinated overnight to give you smoky and spiced up flavour all the way through, and it’s one of those ones where you don’t have to be vegan to enjoy it. I urge you all to make it when you get time.

the ingredients are below should you wish to make it.

500g oyster mushroom clusters

kebab spice mix:

2 tsp cumin

2 tsp smoked paprika

1 tsp hot chilli powder

1 tsp oregano

1 tsp fennel seeds

1 tsp cinnamon

1 tsp garlic granules

1 tsp sumac

1 tsp red miso paste

1 tsp agave syrup

4 tbsp dark soy sauce

2 tbsp tomato paste

Salt and pepper

garlic sauce:

2 garlic cloves

150ml plain yogurt (I used @alpro)

1 tsp vegan mayo

1/2 cucumber grated

Pinch of fresh mint

Salt

1 tsp extra virgin olive oil

Juice of 1/2 lemon

tahini sauce in my cookbook.

Cucumber salad:

1/2 cucumber chopped

1/2 red onion chopped

1/2 tomato chopped

1 tbsp extra virgin olive oil

Juice of 1/2 lemon

Pinch of sea salt

1 tsp chilli powder

Pickled onions:

Juice of 1 lemon

1/2 red onion

4 tbsp red wine vinegar

1 tsp sumac

Salt

1 tbsp agave syrup

Serve kebabs with pitta bread (or whatever flatbread you want), chips on top if you fancy it, chopped lettuce, chilli sauce and that do be it mate.
