Abs Fried Rice

100g White rice per person
1 carrot
1/2 red pepper/ yellow pepper /both (optional)
1 cup frozen petit pois
Finger tip of ginger
1 large garlic / 2 small
Approx 20ml dark soy sauce
Approx 20ml teriyaki sauce
1 spring onion
White onion (optional)
Any other veg/ greens (optional)
Dash of sesame oil

Cook 100g rice per person, transfer to a cold bowl and put in the freezer, or better use leftover rice from day before
Dice ginger finely
Dice garlic finely
Put soy sauce, teriyaki in a ramekin, add diced garlic and ginger, put to one side
Dice onion if adding
Cut carrot into 5mm x 5mm consistent cubes
Cut spring onion into 3-4mm slices
Cut any other veg using to same size as carrot
When all fresh ingredients cut and prepared, heat sesame oil in wok to high heat
Add veg and move in pan quickly for approx 5 mins
Add cold rice and move in pan quickly
Add sauce mix from ramekin and stir fry
Add peas
Move fried rice in pan to one side, crack egg directly into pan and scramble quickly with wooden spoon
Mix all together
Serve
