Chicken Biriyani

1 kg Chicken

1½ tbsp Chilli Powder

1 tsp Turmeric Powder

4 tsp Lime Juice

6 Onions thinly Sliced

1 tbsp Ginger Garlic Paste

1 inch Ginger finely chopped

7 Green Chilly finely chopped

8 Garlic Cloves finely chopped

½ cup Coriander chopped

½ cup Mint chopped

2½ tsp Garam Masala

1 Tomato chopped small

2 tbsp Yogurt

2 tsp Salt

2 Cardamom

2 Bay Leaves

1 inch Cinnamon

4 tbsp Ghee

10 tbsp Oil

4 tbsp Milk

2½ Jeerakashala Rice

5 cups Water

Marinate chicken with chilli powder, ½ tsp turmeric powder, ¾ tsp salt, 1 tsp Lime juice and Ginger Garlic paste.

Allow chicken to rest for at least 30 minutes.

Wash the rice and soak for at 30 minutes.

In a hot pan, add 3 tbsp Ghee and 6 tbsp oil.

Fry sliced onion (keep ¼th of an onion aside for rice) until golden brown.

Remove onion and set aside.

On the same pan and leftover oil add, 2 tbsp oil.

Once oil is hot, shallow fry chicken and set aside.

Meanwhile, boil 5 cup of water.

Also, in another hot pot, add 1 tbsp Ghee and 2 tbsp oil.

Sauté cardamom, bay leaves, cinnamon and leftover over onion until onion is translucent.

Add drained rice and continue sautéing until rice starts to dry out.

Pour boiling water, ¾ tsp salt and mix well.

Cook rice in high heat until rice and water are on same level.

Cover the pot with a paper towel and lid, cook for another 10 minutes in low heat.

Rice is ready.

In the same pan which chicken is fried, add chopped ginger, garlic and green chilly until raw smell is gone.

Add tomato, continue sautéing and allow it cook until tomato is soft.

Add coriander leaves and mint leaves and mix well.

Then add fried onion and sauté for 5 minutes.

Add 2 tsp garam masala and ½ tsp salt.

After a minute, add 3 tsp lime juice, yogurt and mix it very well.

Add fried chicken to it and coat chicken well.

Cook chicken covered in medium heat for 10 minutes.

Meanwhile, mix milk and ½ turmeric powder and set aside.

Now in same pot rice is cooked, layer chicken.

To layer, ½ chicken masala, add ½ cooked rice sprinkle, ¼ tsp of garam masala, spring half of milk mix then same order with rest of chicken, rice, garam masala and milk mix.

Cover pot with aluminum foil and cook the biriyani in low heat for 20 minutes.

Biriyani is ready to serve.
