Cornbread (adapted From grandmother’s Buttermilk cornbread-A

Ingredients:
1/2 cup butter
2/3 cup sugar
2 eggs
1 cup buttermilk (I mix about 3/4 c milk and 1/4 c sour cream together too make this, since I never buy buttermilk)
1 1/2 teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
1/2 tsp salt

Preheat oven to 350 F
Grease an 8” square pan.
Melt butter in microwave in very big bowl (or melt in small saucepan on stovetop and transfer to big bowl before whisking in the sugar)
Remove from heat and whisk in sugar.
Quickly add eggs and whisk until well blended.
Whisk in buttermilk.
Whisk together cornmeal, flour, baking soda, and salt, and then stir (use a big spoon, not the whisk!) into the wet ingredients and mix until well blended and few lumps remain (But don’t stir toooo much)
Pour batter into the prepared pan.
Bake in the preheated oven for about 25-30 min, until an instant-read thermometer inserted in the center reads 195-200 F.
