SICILIAN LEMON TWIST COOKIES

Ingredientai

4 eggs

1 cups sugar

150 grams (3/4 cup) shortening or vegetable oil

1/2 cup milk

Freshly squeezed juice of 1/2 lemon

Zest of a lemon (optional)

3 tablespoons baking powder

4 1/4 cup all purpose sifted flour

FOR THE ICING

2 cups powdered sugar

2-3 tablespoons of water or milk

Juice of one lemon.

In a standup electric mixer add in eggs and sugar and mix for 7-10mins until creamy.

Add in crisco and milk and mix until combined. Squeeze in juice from 1/2 a lemon. Add in 3 tablespoons of baking powder and slowly add in your flour and mix until combined.

Your dough should be nice and soft.

Turn your oven on at 350 degrees F.

***Note-Make sure to add an empty X-large pizza tray on the very last rack of your oven while cookies bake. This will prevent your cookies from burning.

Prepare 2 extra large pizza trays with parchment paper and set aside.

Add your dough to a clean surface and lightly dust some flour and begin to knead it for a few minutes. The dough might appears a bit sticky but don't panic bc this is how it's suppose to be.

When rolling your dough add a bit more flour to your surface if needed but not too much or you won't be able to roll each rope properly.

Cut small pieces and begin to make a small ropes then attach each end and twist. Add them to your tray making sure not to crowd them. Depending on how large you make them they will need a bit of room to grow.

Bake in middle rack for 12-15 mins or until golden brown. Every oven is different so check the bottoms and when they're lightly golden they're ready. Put them on a cooling rack while you make your icing sugar.

ICING

Stir with a fork until smooth.

Lightly brush each cookie and leave them on a tray until they dry. Once dried you can transfer them on a tray and serve.

You can store them in a container and freeze them for at least a few months and take them out as needed. Enjoy! They're going to be your favourite cookies!
