Spicy Thai Peanut Crunch Slaw

2 cups shredded cabbage (red or green)

1 cup shredded carrots

1 red bell pepper, thinly sliced

1/2 cup chopped cucumber

1/4 cup chopped fresh cilantro

1/4 cup roasted peanuts, chopped

3 tablespoons peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice

1 teaspoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon sesame oil

In a large bowl, combine cabbage, carrots, bell pepper, cucumber, and cilantro. (Duration: 3 minutes)

In a small bowl, whisk together peanut butter, soy sauce, lime juice, sriracha, honey, and sesame oil until smooth. (Duration: 2 minutes)

Pour the dressing over the veggies and toss well to coat everything evenly. (Duration: 2 minutes)
