Baked Tamales

1 lb ground beef or shredded chicken

1 (10 ounce) can enchilada sauce

1 can of drained rinsed black beans

1 (4oz) can of green chilies

1 teaspoon ground cumin

1 teaspoon chili powder

1/8 teaspoon salt

1/8 teaspoon freshly ground pepper

1 1/2 cups shredded cheddar cheese

1 box of corn bread mix made according to instructions without the oil - just add eggs and water/milk

1 cup cream-style corn

1 teaspoon chili powder

salsa - for serving

avocados or guacamole - for serving

sour cream - for serving

Preheat oven to 350 or 325 for convect bake.

In a large pan - brown ground beef, add rest ingredients except for shredded cheese and cornbread ingredients. Heat together. Or if using shredded chicken - just mix all the filling ingredients together in large bowl. I usually use pulled rotisserie chicken from Costco - They sell a big pack of prepulled chicken.

In separate bowl mix together cornbread ingredients with cream corn and chili powder.

In a large greased cast iron skillet - pour 3/4ths of cornbread batter. Bake for 15 to 20 minutes till starting to brown.

Remove from oven and pour filling mixture over top. Sprinkle shredded cheddar cheese over top. Pour remaining cornbread batter over top.

Bake for 30 to 45 minutes until brown on top and batter is cooked through. This can sometimes take longer if too much batter is on top - so I've become more careful to only cover the top with a small layer of batter! :)

You can also double it and make it in a larg cast iron casserole baking dish.
