The Best Spicy Chicken Sandwich

4 pieces boneless skinless chicken thighs (pounded to even thickness)
1 cup buttermilk (see notes below)
2 tbsp Sriracha (or your favorite hot sauce)
1 tsp each salt, pepper, garlic powder
1 cup all-purpose flour
3 tbsp cornstarch
1 tbsp paprika powder
1 tsp each salt, pepper, garlic powder, cayenne powder (reduce cayenne for less spice)
1/2 cup mayonnaise
2 tbsp Sriracha (or your choice of hot sauce)
cooking oil (for frying)
4 burger buns (lightly toasted with butter)
lettuce, tomato, and/or pickles (sliced, or your choice of toppings)

In a medium bowl, combine buttermilk, Sriracha, salt, pepper, and garlic powder. Add chicken thighs and marinate in the fridge for at least 4 hours or overnight.
Whisk together flour, cornstarch, paprika, salt, pepper, garlic powder, and cayenne powder in a large bowl.
Add 2 tbsp of the marinade to the mixture and mix with a fork. Dredge the chicken with the flour mixture, making sure each piece is evenly coated. Prepare the sauce by mixing together Sriracha and mayonnaise.
Heat oil in a deep skillet until it reaches 325˚F (165˚C). Fry the chicken for about 3-4 minutes on each side, or until golden brown. The thickest part of the chicken should register 165˚F (75˚C).
Generously spread the spicy mayo on both sides of the buns and add your preferred toppings and the chicken. Serve immediately and enjoy!

Suggested Oven “Air Fry” Method
Here’s what I’d try:
1 Preheat your oven (air fry mode) to 400 °F (or whatever the closest your oven allows; many air fry ovens run 375–425 °F). This higher temp helps crisp the coating.
2 Prep the chicken as per recipe (marinate, dredge). Let any excess dredge shake off, but keep a nice coating.
3 Lightly spray or brush oil on both sides of the coated chicken pieces (or use a high-smoke point oil like avocado or canola). This helps with browning and crisping in an air-fry environment.
4 Arrange the pieces on the air fry tray / rack in your oven so there’s good air circulation and the pieces aren’t touching.
5 Cook time: Start with 10–12 minutes, then flip and cook another 6–8 minutes (so ~16–20 minutes total).
6 Check doneness: Use an instant read thermometer — you want the thickest part to hit 165 °F (≈ 74 °C).
7 Adjust if needed: If after 16–20 minutes it’s not crisp enough, you can bump heat or leave it a little longer, watching carefully so it doesn’t burn. If it seems to be crisping too fast on the outside but still raw inside, lower the temp slightly and cook longer.
