For the Cakes:

1 cup almond flour

¼ cup cocoa powder (unsweetened)

½ tsp baking powder

¼ tsp salt

3 large eggs

⅓ cup granulated erythritol

¼ cup melted butter

¼ cup unsweetened almond milk

1 tsp vanilla extract

For the Cream Filling:

¼ cup heavy whipping cream

2 tbsp powdered erythritol

¼ tsp vanilla extract

For the Chocolate Coating:

½ cup sugar-free chocolate chips

1 tsp coconut oil

Step 1: Bake the Cakes

Preheat oven to 350°F (175°C).

Grease a mini muffin or whoopie pie pan.

Whisk dry ingredients. In another bowl, mix eggs, butter, milk, and vanilla.

Combine wet and dry. Fill molds ¾ full.

Bake 12–15 mins. Cool completely.

Step 2: Make the Filling

Whip cream, sweetener, and vanilla until stiff peaks form.

Transfer to piping bag.

Step 3: Fill the Cakes

Cut cakes in half. Pipe cream onto one half and sandwich together.

Step 4: Coat in Chocolate

Melt chocolate chips with coconut oil. Dip or drizzle over cakes.

Chill 15 mins to set.

Step 5: Indulge!
