1/2 cup unsweetened shredded coconut

1/2 cup chopped walnuts or pecans

1 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

Wet ingredients:

3 large eggs

1/3 cup honey or maple syrup

1/3 cup coconut oil (melted) or olive oil

Preheat oven:

Preheat to 350°F (175°C). Line a muffin tray with liners or grease lightly.

Mix wet ingredients:

In a large bowl, whisk eggs, honey/maple syrup, melted coconut oil, and vanilla until smooth.

Add dry ingredients:

Stir in grated carrots, apple, coconut, nuts, raisins, flaxseed, baking soda, cinnamon, and salt. Mix until fully combined.

Rest the batter (optional):
