Lemon Grass Beef Salad

2 Lemon grass stalks (bulbs only), finely

chopped

1/4 Cup Brown sugar, packed

1/4 Cup Lime juice

3 tbsp Soy sauce

1 tbsp Sesame oil

1 tsp Grated lime zest

1/2 tsp Chili paste (sambal oelek)

1/2 tsp Pepper

4 cups Cooked rice stick noodles (see Tip, below)

2 cups Sugar snap peas, trimmed and sliced

diagonally

1 1/2 cups Slivered orange pepper

1/4 cup Chopped fresh cilantro

1/4 cup Chopped fresh mint

1 lb Beef strip loin steak

1/2 tsp Salt

1/4 tsp Pepper

Whisk first 8 ingredients together in a medium bowl until brown sugar is dissolved.

Combine next 5 ingredients in a large bowl and add 1/2 cup (125 mL) lemon grass mixture. Toss until coated.

Sprinkle steak with salt and pepper. Grill on direct medium-high heat for about 7 minutes per side for medium-rare or until steak reaches desired doneness. Let stand, tented with foil, for 10 minutes. Cut diagonally, across the grain, into thin slices and toss with remaining lemon grass mixture. Divide noodle mixture onto 4 serving plates, arranging beef slices over top. Makes 4 servings.
