Persian Jeweled Rice

1/3 cup neutral oil (avocado, canola, or grapeseed)
1 onion, chopped or sliced
1/2 cup chopped pistachios
1/2 cup slivered almonds
1/2 cup dried barberries
1/2 cup cranberries (or both for extra color!)
Zest + juice of 1 orange
1 tsp turmeric
2 tsp salt (or less to taste)
2 cups washed basmati rice
3 1/2 cups water

Heat oil in a good nonstick pot and sauté onions until golden.
Add nuts and dried fruits, stir, then mix in orange zest, juice, turmeric, and salt.
Add rice and water, stir, and bring to a boil uncovered.
When water is level with the rice, cover and simmer on low.
For plain rice: cook 15 min, fluff, and serve.
For that crispy tahdig: let it cook 45 min for a golden crust.
Flip the pot onto a plate to reveal the jeweled rice and crunchy bottom.
