French Onion Meatloaf with Gruyère

1 1/2 lbs ground beef

1 large onion, thinly sliced

2 tbsp butter

1/2 cup breadcrumbs

1/4 cup milk

1 egg

1 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 1/2 cups shredded Gruyère cheese (divided)

Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment.

In a skillet, melt butter and cook onions over medium-low heat for 15 minutes until golden and caramelized. Set aside to cool slightly.

In a bowl, mix ground beef, breadcrumbs, milk, egg, Worcestershire, salt, pepper, 1 cup Gruyère, and half the onions.

Shape into a loaf and place on the baking sheet or in loaf pan.

Bake for 40 minutes. Top with remaining onions and cheese, then bake another 10 to 15 minutes until cheese is bubbly and internal temp is 160°F.

Rest for 5 to 10 minutes before slicing.
