Red pepper (1 part)
Onion (1 part)
Garlic
Cream
Tomato paste
Chilli flakes
Paprika
Parmesan

Preheat oven to 180.
Place onion, pepper & garlic on a tray. Pour oil on them
Once charred, peel the skin off the peppers.
Place onions, garlic & peppers in a pot to simmer
Once the flavours have intensified, add tomato paste.
Sauté until tomato taste is less harsh.
Pour cream & allow to simmer.
Use a stick blender to create a consistent sauce (add a little butter)
Put back on stove until desired consistency is achieved.

Dice chorizo into chunks
Put in cold pan & cook until crispy.
Take out chorizo pieces but keep oil
Sauté oven roasted ingredients in chorizo oil
