Zucchini Rolls

3 small zucchini

2 tablespoons olive oil

Pinch of salt and pepper, to taste

1½ ounce goat cheese

1 tablespoon parsley, chopped

1/2 teaspoon lemon juice

2 ounces baby spinach

1 teaspoon basil, chopped

1. Begin by slicing your zucchini lengthwise into ¼-inch slices. Preheat your grill to medium heat.

2. Brush oil onto both sides of your zucchini slices and season with a bit of salt and pepper.

3. Grill for about 8 minutes, flipping once in between.

Check for desired tenderness.

4. In a medium bowl, mix together goat cheese, parsley and lemon juice. Ensure that this is mixed thoroughly.

This mixture is your filling.

5. Evenly distribute the filling to the grilled zucchini slices, placing the filling about ¼ inch from the end of the slice.

6. Place them seam side down on the grill for about 1 minute, using toothpicks to keep rolls intact. Remove from heat and serve.
