SEITAN

Vital Wheat Gluten 250 g

Water 275 g

Salt

Pepper

SAUCE

Olive Oil

Garlic

Passata 750 g

Mozzarella 1

Parmesan

Basil

Parsley

Oregano

PREP

  • Mix the Vital Wheat Gluten with Water, Salt and Pepper.

  • Kneed and form into a Dough.

  • Cut the dough and form it into thin slices.

  • Steam the Seitan Slices for 40 min.

COOKING

  • In a pot heat up Olive oil.

  • Add the Passata, put on the lid and let cook.

In the meantime

  • In a pan heat up Olive Oil.

  • Cut the Mozzarella in slices and drain out excess water.

  • Sear the Seitan Slices and season with Salt, Pepper and Garlic Powder.

  • Season the Sauce.

  • Add in the Seitan slices.

  • Top the Seitan with Parmesan and the Mozzarella slices.

Cover and cook for 15 min.

Pastabos

The Seitan will swell considerably after steaming.
