Ginger Beef (Air Fryer)

3/4 cup Cornstarch
1/2 cup Water, room temperature
2 Large eggs
1 lb Flank steak (or beef tenderloin)
2 tbsp Vegetable oil
1 Medium yellow onion, thinly sliced
1 Large carrot, thinly sliced
1 Medium green pepper, thinly sliced
1 Medium red pepper, thinly sliced
2 Green onions, chopped
2 tbsp Tamari Or soy sauce
1 tbsp rice vinegar
1 tbsp red wine vinegar
1 tsp Brown sugar
1 tbsp Ginger paste
1 tbsp Ginger root, peeled, thinly sliced

In a medium bowl, whisk together cornstarch and water. Stir in eggs. Slice beef into 1 inch (2.5 cm) thick slices and place in bowl with ega mixture. Let stand in refrigerator for 10 minutes to marinate.
Heat oil in a medium frying pan on medium-high. Add onion and cook for 3 minutes. Add carrots, green pepper, red pepper and green onion and Cook for5 minutes.
Add soy sauce, rice vinegar, red wine vinegar, brown sugar, ginger paste and ginger root. Cook, stirring often, until slightly thickened, about 7 minutes, Stir in beef and toss to coat. Transfer to air fryer basket and cook at 400°F (2009C) for 6 minutes. Flip beef and cook for 8 minutes. Makes 4 servinas.
Combo air fryer: Cook for 12 minutes, flipping beef halfway through.
