French Onion Chicken

1 whole chicken
2 large onions (thinly sliced)
6 sprigs fresh thyme or 1 ½ tsp dried thyme leaves
2 tbsp Worcestershire sauce
3 ½ tsp kosher salt
½ tsp black pepper
1 packet French onion soup mix
3 cups chicken stock
3 garlic cloves (minced)
1 tbsp olive oil
For Gravy: 2 tbsp cornstarch + 3 tbsp water (mixed into a slurry)

Sear the Chicken (Optional but Adds Flavor):
Heat olive oil in a large skillet over medium-high heat.
Season the chicken all over with half of the salt and pepper.
Sear for 3–4 minutes per side until golden brown (this won’t fully cook it).
Transfer to a slow cooker or Dutch oven.
Add the Flavors:
Scatter the sliced onions and garlic over and around the chicken.
Sprinkle with thyme, French onion soup mix, Worcestershire sauce, and remaining salt and pepper.
Pour in chicken stock.
Cook Until Fork-Tender:
Slow Cooker: Cover and cook on low for 6–8 hours.
Oven: Preheat to 325°F (163°C), cover Dutch oven, and bake for 2 ½–3 ½ hours.
Shred and Remove Bones:
Carefully remove chicken from the pot.
Remove and discard all bones, shredding the meat into bite-sized pieces.
Return shredded chicken to the pot with the onions and cooking juices.
Make the Gravy:
Switch slow cooker to high (or stovetop to medium heat).
Stir in the cornstarch slurry and cook until thickened, about 8–10 minutes.
Serve:
Spoon the tender chicken and rich onion gravy over mashed potatoes, rice, or buttered noodles.
