Shiitake Bacon 🥓

1 pkg shiitake mushrooms, thinly sliced

2 tsp soy sauce

1 tbsp olive oil

1 tsp paprika

Roasted Shallot Ranch

1/3 cup mayonnaise (can use vegenaise)

1/2 cup greek yogurt (can use vegan yogurt)

2 tbsp dill, minced

2 tbsp parsley, minced

Juice of 1/2 a lemon

1 shallot, quartered

1 tsp salt

1 tbsp neutral oil

Additional salad ingredients

Crumbled Blue cheese

Chickpeas

Croutons

Cherry tomatoes

Shittake Bacon

Heat oven to 325F

Toss shiitakes in soy sauce, olive oil, and paprika

Spread mushrooms out on a parchment paper lined baking sheet

Roast for 1 hour, making sure to rotate the pan after the 30 minute mark

Roasted Shallot Ranch🫙

Instructions:

Heat oven to 400F

Place the quartered shallot onto a sheet of foil and cover with 1 tbsp neutral oil and cover. Roast for 1 hour

In a bowl, whisk together mayo, yogurt, and lemon juice until combined. Add in the roasted shallot and blend using an immersion blender until the consistency is homogenous

fold in the minced parsley and dill
