Spicy Pickled Aubergine

1 aubergine, cubed
3 garlic cloves, whole
1 tsp ginger
1 tsp cumin seeds
1 tsp 3 green chillies
2 bullet chillies
1/2 tsp fenugreek
1/2 tsp fennel seeds
1 tsp salt
5 tsp apple cider vinegar
1 tbsp agave or brown sugar
2-3 tbsp oil
4-5 curry leaves
3 garlic cloves, sliced
1 tsp smoked chilli powder
1 tsp turmeric

Blend 3 cloves garlic with ginger, cumin seeds, fennel seeds, fenugreek, sea salt, green chillies, bullet chillies and the apple cider vinegar. Blend until a smooth paste. Add more vinegar if needed. (I used my coffee grinder to blend this all together until smooth, but you can use a regular blender or hand blender).
Heat oil in a pan and add the curry leaves, sliced garlic and sautee until fragrant. Pour in the blended mixture. Add in the tsp of turmeric and smoked chilli powder (or regular chilli powder) and the agave. Stir until you get a smooth paste.
In a separate frying pan, add in the chopped aubergine and fry until golden brown, soft and slightly crispy on the edges. Drain the oil once cooked.
Stir the aubergine into the sauce until fully coated
