Chicken Alfredo with Air Fryer Cubed Potatoes

Such an easy midweek meal perfect with pasta, rice or airfryer cubed potatoes, you decide. Quick to prepare.

For the chicken:
300g chicken breast
1 tsp garlic granules
1 tsp Italian herbs
1 tsp onion granules
Salt & pepper
For the sauce:
100ml chicken stock
100g @philadelphia_uki
1 tsp lazy garlic
1 tsp oregano
40g parmesan
Cornflour to thicken ONLY if required)
For the potatoes:
400g potatoes
1 tbsp Cajun
Salt and pepper
Drizzle of olive oil
Tender-stem broccoli, to serve

Peel, quarter, and dice your potatoes into small cubes. Toss them in a drizzle of oil, then season with salt, pepper, and Cajun spice. Pop them into the air fryer basket and cook at 200°C for 20 minutes, shaking halfway through.
Meanwhile, lightly spray a pan with low-calorie cooking spray and add your chicken. Season with salt, pepper, Italian herbs, and onion granules.
Once the chicken is cooked through, stir in the garlic purée, Philadelphia, chicken stock, and grated Parmesan. Mix well until the sauce thickens. If it needs a little help, stir in a touch of cornflour to reach your desired consistency.
Serve up your creamy chicken with the crispy air-fried potatoes and some tenderstem broccoli for a tasty, balanced meal.
