1 cup pastina pasta
1 brown onion (soanish onion or white onion works)
2 carrots
2 celery sticks
4 garlic cloves
6 cups chicken broth
Salt and black pepper to taste
1 bay leaf
1 parmesan rind
Garnish- fresh or dried parsley, grated parmesan cheese

Roughly chop the onion, carrots, celery and garlic cloves (you don’t need to be too precise)
Add veggies to a large pot over medium heat. Let them warm up stirring often. You aren’t really cooking them at this stage rather want to bring out the flavors of the veggies. I did this for less than 5 min.
Pour the chicken broth into the pot and add the bay leaf and parmesan rind. Season well with salt and black pepper, then place the lid on and simmer for approximately 20 minutes over medium-high heat
With a fork, check that the vegetables are cooked (they should be soft and tender). Remove the bay leaf and rind then strain out the vegetables through a slotted spoon into a blender. Leave the yummy broth in the pot.
Add ½ cup of water to the veggies and blend until smooth
Pour the blended vegetables back to the pot with the vegetable broth and stir through.
Bring soup back to a boil, then add the pastina pasta. Ensure to stir the pastina every minute or so, to ensure it doesn't stick to the bottom (pastina usually takes about 5-6 minutes to cook)
Serve in bowls - optional garnish with chopped parsley, grated parmesan cheese. Goes great with crusty garlic bread (we use Texas toast)
