1 can black beans, drained
1 can chickpeas, drained
2 cucumbers, chopped
Cherry tomatoes, chopped
1 pack of mozzarella pearls
1/2 onion, finely chopped
Kalamata olives, optional
Banana peppers, optional
For the dressing:
Olive oil
Red wine vinegar
Banana pepper juice, optional
Dijon mustard
A bit of maple syrup
Parsley or cilantro, optional

Drain and rinse one can of black beans and one can of chickpeas.
Chop two cucumbers and some cherry tomatoes.
Add a whole pack of mozzarella pearls to the mixture.
Finely chop half of a red onion and add it to the salad.
Include kalamata olives and banana peppers as desired.
Add fresh parsley (or cilantro if preferred) on top.
In a separate bowl, prepare the dressing by mixing olive oil, red wine vinegar, banana pepper juice, Dijon mustard, and a little bit of maple syrup.
Whisk the dressing using a frother, whisk, or fork until well combined.
Combine all the ingredients in a large container and pour the dressing over the salad.
Mix everything together and let it sit in the fridge to marinate before serving.
