2 ripe mangoes, peeled and diced ๐Ÿฅญ

1 small red bell pepper, diced ๐ŸŒถ๏ธ

1 small cucumber, sliced ๐Ÿฅ’

2 cups mixed greens or baby spinach ๐Ÿฅฌ

Cook the Shrimp:

Heat a nonstick skillet or grill pan over medium-high heat. Cook shrimp for 2โ€“3 minutes per side until pink and slightly charred. Remove and set aside. ๐Ÿ”ฅ
