Spicy Asian Cucumber Salad

2 large cucumbers, thinly sliced

1/4 cup rice vinegar

1 tbsp soy sauce

1 tsp sesame oil

1 tsp honey or maple syrup

1 clove garlic, minced

1/2 tsp red pepper flakes (adjust to taste)

1 tsp sesame seeds

2 green onions, sliced

Thinly slice cucumbers and place them in a large bowl. (5 minutes)

In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, garlic, and red pepper flakes. (3 minutes)

Pour dressing over cucumbers and toss until evenly coated. (2 minutes)

Garnish with sesame seeds and green onions. Chill for 10 minutes if desired before serving. (2 minutes)
