High-protein • High-fiber Lentil Chickpea Salad

SALAD INGREDIENTS

1 package steamed lentils

2 cans chickpeas (drained and rinsed)

1 orange bell pepper, chopped

Persian cucumbers, chopped

¼ red onion, finely chopped

½–1 cup feta cheese (depending on preference)

¼ cup fresh dill, chopped

¼ cup fresh parsley, chopped

Juice of 1 fresh lemon

Toss everything together in a large salad bowl.

SIMPLE SWEET & TANGY DRESSING

Olive oil (add to taste) about 1/3 cup

Apple cider vinegar (add to taste) 1-2 tablespoons

Juice of 1 fresh lemon

1 tablespoon Dijon mustard

1–2 tablespoons maple syrup (adjust based on how sweet you like it)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt

1 teaspoon pepper

Whisk dressing ingredients together and pour over the salad. Toss well and let it sit for a bit so the flavors can blend.
