Creamy Lemon Chicken & White Bean Soup

Ingredients (serves 4):

1 tbsp olive oil

1 small onion, diced

2 carrots, diced

2 cloves garlic, minced

3 cups cooked shredded chicken

2 (15 oz) cans white beans, drained & rinsed

4 cups low-sodium chicken broth

1 tsp dried oregano

Juice of 1 large lemon

ยฝ tsp sea salt (adjust to taste)

Fresh cracked pepper

2 cups chopped spinach

ยผ cup plain Greek yogurt (stirred in at end for creaminess)

In a large pot, heat olive oil over medium. Sautรฉ onion and carrots 4โ€“5 minutes until softened. Add garlic and cook 30 seconds. Stir in chicken, beans, broth, oregano, salt, and pepper. Simmer 15โ€“20 minutes. Add spinach and cook until wilted. Remove from heat and stir in lemon juice and Greek yogurt for a creamy finish.
