Sheet Pan Egg + Egg Frittata (or Baked Eggs & Spinach)

8 eggs
1 cup milk (or milk + water)
1 cup spinach (fresh)
1 cup chopped vegetables (e.g capsicum, onion, mushroom, zucchini)
100g ham / lean bacon / cooked chicken (opt)
Salt, pepper, herbs (e.g parsley, oregano)
手順
Preheat oven to 180°c (fan)
Lightly grease a baking tray or a large oven-safe dish
Spread vegetables (and ham if using) on tray
Whisk eggs + milk + salt/pepper + herbs, then pour over veggies
Bake for 20-25 mins until set and slightly golden
Let cool, then cut into squares of slices
