1/3 cup (75 g) butter (salted, softened)
2 tbsp butter (salted, in slices for lining loaf pan) (I skipped this)
5-6 medium apples (granny smith, fresh, peeled, cored, diced small) (640 g.)
1/3 cup (67 g) sugar
2 medium eggs (whisked)
1/2 tsp vanilla extract
1/2 tsp cinnamon (ground)
1/8 tsp nutmeg
1/3 cup milk (whole) (85 g almond or oat milk for high altitude)
1 ½ cups (185 g) flour (all purpose) + 1 Tbs = 193 g for high altitude
1/2 tsp baking powder-tiny pinch for high altitude
1/2 tsp baking soda-tiny pinch for high altitude
1/4 tsp salt
Drizzle:
1/2 cup (64 g) sugar (powdered)
1 TBS apple cider or 1 TBS milk + 1/2 tsp vanilla

Preheat oven to 350 (365 for high altitude) degrees F. Set out 8 mini loaf pan and line it with sheets of parchment paper cut to size so mini apple breads don’t stick. Spray the mini tins and then put the parchment paper down cut 3 1/2” x 4”.
Add a small slice of butter to the bottom of each parchment paper lined mini loaf. (Skip)
Use a stand mixer (or hand mixer and a large bowl) to beat together softened butter and sugar for about 1 minute, scraping down the edges with a spatula, until combined.
Add eggs slowly, whisking at the same time, until combined.
Add milk, and vanilla extract.Beat for about another minute, until combined. The mixture will be very liquidy at this time.
Add in fresh diced granny smith apples. Stir to combine.
Whisk flour, baking powder, baking soda, and salt, cinnamon & nutmeg. Add to the the wet apple bread mini loaf ingredients. Stir to combine into a thick batter.
Evenly spread the apple bread mini loaf mixture into the mini loaf molds. (I used 1 small loaf as well)
Bake mini breads at 350 (365)degrees F for about 20-30 minutes until browned on the tops and edges. Cool in pan for around 20-30 minutes, or until they come to room temperature. You can make the icing while waiting.
To make the apple cider icing topping
Add powdered sugar to a bowl.
Slowly pour in 1-2 teaspoons of fresh apple cider into the powdered sugar, whisking to combine. Add only as much apple cider as needed to get the desired consistency. I like it to be similar to pancake batter.
Drizzle apple cider icing on mini apple bread loaves as desired.

9/11/25 I used 646 g apples (5) which is a lot so maybe reduce to 640 g. I didn’t not use apple cider in the drizzle. Bake the small loaf longer but even at 365 on 4th notch up, they had to cook longer than 30 min.
