Andy’s Summer Corn Salad

6 ears Corn on the cob, shucked with corn removed (Blanch corn for 8 minutes)

1 cup cherry tomatoes, diced

1/2 red onion, diced

2/3 cup cilantro, chopped

3 avocados, diced

2 limes, juiced and zested

2 tbs olive oil

1 tsp salt

1 tsp cumin

In a large bowl combine all ingredients and toss. Taste and adjust seasoning if you think it needs it! Enjoy :)
