Hazelnut Cookies

Hazelnut Cookies

1 stick (½ c.) unsalted butter

½ c. superfine sugar

1 t. vanilla

½ t. freshly grated orange zest

1 c. all-purpose flour

½ t. salt

1/4 t. baking powder

3/4 c. hazelnuts, chopped fine, toasted until golden, and cooled

1. preheat oven to 325.  Grease two baking sheets.

2. with mixer, beat together butter and sugar until light and fluffy.  Add vanilla and zest.

roll level teaspoons of dough into balls and put 2" apart on baking sheets.  Bake cookies in batches until pale golden, about 18 minutes.

3. In another bowl, sift flour, salt, and baking powder.  Combine with and butter and stir in nuts.

4. Bake 2” inches apart about 18 minutes until golden.
