Maple Mustard Roasted Carrots With Whipped Goat Cheese

For the carrots:

1 lb petite rainbow carrots, trimmed

2 tbsp olive oil

2 tbsp maple syrup

1 tbsp grainy mustard

1 tsp Dijon mustard

Salt

For the whipped goat cheese:

140g goat cheese log, room temperature

3/4 cup plain Greek yoghurt

For topping:

1 tsp maple syrup

1 tsp grainy mustard

2 tbsp chopped pecans

  1. Preheat oven to 200°C

  2. In a bowl, whisk together olive oil, maple syrup, grainy mustard, Dijon mustard, and salt

  3. Place carrots on a baking sheet. Brush with sauce and drizzle over any remaining. Roast for 20-23 minutes until tender

  4. In a medium bowl, combine goat cheese and Greek yoghurt. Use a hand mixer (or food processor) until smooth and creamy

  5. Spread whipped goat cheese on a serving dish. Place roasted carrots on top. Mix 1 tsp maple syrup and 1 tsp grainy mustard, drizzle over carrots, then sprinkle with chopped pecans.

  6. Enjoy warm as a side dish or appetiser
